Description
Single estate, limited production Organic Extra Virgin Olive Oil, produced exclusively from hojiblanca olives from early harvest in “El Vicario” estates. Olive grows between 20 and 30 years, planted in 7 x 7m with drip irrigation system.
Harvest: First 15 days of November
Production: Cold extraction 2 phases. Only with early harvested olives, 60-70% still green.
Varieties: Hojiblanca 100%
Zone of production: Finca el vicario, Desierto de Tabernas (Almería) Spain
Panel test/organoleptic analysis:
Colour/aspect: Intense gold colour with green hues, very clean. Filtered
Aroma/bouquet: Intense fruity, wide and powerful, notes of tomato, Apple and banana. Also almonds and mint touches in less intensity. Very Complex and well balanced.
Flavour/taste: Soft entrance with vegetable notes of lettuce and almonds. Good balance between bitterness and spiciness. Piquant flavours are present and appear late on the throat, this will descend on the aftertaste
Recommendations of use: Salads, toasts, fresh goat cheese, meat sauces, cold Spanish soups (gazpacho, ajoblanco, salmorejo, etc…). To be used in low temperature as it’s a cold press premium olive oil with high organoleptic value which can be only enjoyed in these conditions. The variety shows a medium stability that together with the early harvest gives this oil a longer life than usual. Its polyphenol content ranges between 450-700mg / kg depending on batch
